Tasting Notes
Features
The wine has a pale straw yellow colour. The nose is complex and elegant, with tones of peach and apricot and a citrus sensation as an accompaniment. In the mouth it is dry, persistent with good acidity. The refined perlage is fine and persistent.

Pairings
Ideal companion for aperitifs, appetizers and desserts. It is perfect to accompany preparations in balance between sweet and salty.

Vinification
Soft pressing with the help of pneumatic presses, clarification and finally fermentation at a controlled temperature with the use of selected yeasts.

THE CLASSIC MELISSIMATO INSPIRED RECIPE

INGREDIENTS

– Your favourite cognac
– We used Remy Martin 1738
– Bitters – we used angostura
– One sugar cube

INSTRUCTIONS

Take a flute and add the sugar cube, add a couple of
drops of bitters and use a bar spoon to help dissolve. Add 20ml of cognac, ideally chill this beforehand so it’s the same temperature as your prosecco!

Stir to make sure everything is dissolved and top up the glass with Fenice Melissimato
– just delicious and complex!

This one is perfect for the cold evenings.

INGREDIENTS

– 2 oz. Fresh White Peach Puree
– 6 oz. Chilled Prosecco Fenice Millesimato
Extra Dry

Garnish: Fresh Raspberry

INSTRUCTIONS
Place the puree in a mixing glass.

Add the Prosecco.

Stir and pour into a chilled champagne glass.

Garnish with a fresh raspberry.

Serve and enjoy!

Bubble Bouquet

INGREDIENTS

– 1 1/2 vodka
– 1/2 ounce simple syrup
– 1-2 drops of rose water
– Fenice Millesimato Extra Dry

Garnish: Fresh rose petals

INSTRUCTIONS

 

Gather the ingredients.

In a shaker filled with ice, add 11⁄2 oz. Vodka, 1⁄2 oz. simple syrup, and 1 to 2 drops rose water.

Shake and strain into a champagne flute. Top with Prosecco.
Garnish with rose petals.

Serve and enjoy!

INGREDIENTS

– 1.5 oz Pear vodka
– 3/4 oz lemon juice
– 3/4 oz truffle honey
– 2 oz Chilled Prosecco Fenice Millesimato
Extra Dry

Garnish: Fresh rose petals

INSTRUCTIONS

Gather the ingredients.
Add vodka, lemon juice, and truffle honey in a shaker.

Strain into a champagne glass.
Float with Prosecco.

Serve and enjoy!

INGREDIENTS

– 1 dash angostura bitters
– 1 sugar cube
– 4 oz. Fenice Millesimato Extra Dry Prosecco
– 1 oz. Campari

Garnish: Fresh rose petals

INSTRUCTIONS

Gather the ingredients.

Add 1 dash angostura bitters onto 1 sugar cube
and drop it into a champagne flute.

Add 4 oz. Fenice Millesimato Extra Dry.
Top with 1 oz. Campari.

Serve and enjoy!

INGREDIENTS

– 3 ounces Elderflower liqueur
(we used St. Germain)
– 1/2 ounce gin
– 2 ounces Fenice Millesimato Extra Dry

Garnish: Fresh mint sprigs, lemon slice

INSTRUCTIONS

Gather the ingredients.

Pour three ounces of Elderflower liqueur and half
an ounce of gin in a flute.

Fill with two ounces of Fenice Millesimato Extra Dry.
Garnish with mint sprig and lemon slice.

Serve and enjoy!
